All the info I find about raw pressed cheese says to wait 2 months before eating. Anybody know why? What happens after 2 months? Thanks, PJ
Well, in order to sell cheese made from raw milk on a commercial scale there is a 60 day mandatory aging requirement. After this amount of time any bad bacteria has been overrun by the good bacteria and is gone. This meets the FDA standard for safety. Christy
