We've been eating and loving our pressed cheeses over the past few months. :biggrin But I'm now cutting into my larger cheeses (4-5 pounds). I'm curious how to store them once we cut them open. The first time, I cut it into wedges. I then rewaxed the wedges and put them back into the cheese fridge. But they got a lot of extra mold on them. Should I just store them in the regular fridge in ziploc bags? Freeze them? Suggestions? Thanks, PJ
That is the trouble with large blocks. DO NOT FREEZE! Lightly wrap them and keep them in the refrigerator. There will be mold so control it by checking often and trimming as needed. Christy
